I am an avid baker. When diagnosed with celiacs disease about 4 1/2 years ago I went through all the grieving stages over FOOD; denial, anger, bargaining, depression and now, 4 1/2 years later Finally acceptance!! I know this sounds so weird, but I missed food something fierce! So many aspects of my social life revolve around food.
I have learned so much over the past 4 1/2 years. I have made, re-made, eaten and tossed hundreds of recipes! I am determined to keep doing what I loved and what I love to do for my family.
This delicious Chocolate Chip Recipe is super yummy, easy and most important of all, delish! Paige from Paige Avenue shared with me one of her favorite recipes; I simply changed a few ingredients to make them gluten free. I can say that they are definitely work making!
Oatmeal Chocolate Chip Cookies
- 1 cup butter
- 1/2 sugar
- 1 cup packed brown sugar
- 1 egg
- 1 egg yolk
- 1 Tbsp vanilla
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp kosher salt (this is the key, do not sub for regular salt!)
- 2 cups GF all purpose flour blend (I love Namaste Foods Gluten Free Organic Perfect Flour Blend )
- 1 cup GF rolled oats (I love Bakery On Main Gluten Free Non-GMO Happy Oats)
- 3 cups chocolate chips ( I use part Enjoy Life mini Semi-Sweet Chocolate Chips and part Ghirardelli Milk Chocolate Baking Chips)
Preheat oven to 350 F. Line baking sheets with parchment paper.
Cream butter & sugars together until light and fluffy. Beat in egg, yolk, and vanilla. Add soda, salt, and baking powder, and flour, mix. Add oats and chocolate chips and stir.
Drop or I like this Scoop onto parchment lined baking sheets and cook for 7-8 minutes or until slightly golden. Allow to cool on pan for a couple of minutes and then transfer to a cooling rack. Enjoy!
*I usually only cook a few dozen at a time and put the rest of the dough in the fridge to save for later. I have found that Gf cookies tend to dry out faster than we can eat them. I’d rather have a fresh batch of cookies straight out of the oven.
