Oatmeal Scotchies {Gluten Free}

You know that delicious go-to cookie, one that never lets you down? A favorite of your families, something that is reliable and always yummy.

Well, that is what Oatmeal Scotchies are to our family. When I was diagnosed with Celiacs 5 years ago, I was on a mission to make these GF so I could still enjoy them!

Oatmeal Scotchies {Gluten Free}

Oatmeal Scotchies

1 ¼ cups GF cup for cup flour, my favorite here . (If not GF just 1 1/4 cups all purpose flour)
1 tsp baking soda
½ tsp ground cinnamon
½ tsp salt
1 stick butter, softened + 1/2 cup shortening*
¾ cup granulated sugar
¾ cup packed brown sugar
2 large eggs
1 tsp vanilla
3 cups GF quick or old fashioned oats, my favorite here
2 cups mixed butterscotch morsels and milk chocolate chips quantities to your liking (I do half butterscotch/half milk chocolate)

Preheat oven to 375 F (325 F for convection)
Combine flour, baking soda, cinnamon and salt in a small bowl. Beat butter, sugars, eggs and vanilla in a large mixer bowl. Gradually beat in flour mixture. Stir in oats and morsels. Scoop onto an ungreased baking sheet.
Bake for 7- 8 minutes. Cool on baking sheets for 2 minutes, remove and cool completely.

*Note: When cooking with GF flour, I have found that baked goods tend to dry out quicker. I have found that using 1/2 butter + 1/2 shortening in this recipe keeps the cookies tender for longer. I also like to cook up a couple of dozen cookies and then refrigerate the rest of the dough for later…I love fresh cookies, hot out of the oven.

*If the cookies are too flat, add a little more flour
