{Gluten Free} Cookie Monster

When I was in college my apartment was across the street from a fun little restaurant that made Giant Cookies in a pie pan. They’d load the cookie with rich creamy ice cream, delicious hot fudge, sticky sweet caramel, and top it all off with light & fluffy whipped cream; a Cookie Monster.

My roommates and I loved gathering around the table with spoons in hand to celebrate the good, or listen and cry over the not so good. (this may or may not have attributed to the dreaded freshman 15).

Fast forward 15 years and we love making a scaled down version at home. Cookie Monsters are super simple to make, fast and delicious! The perfect Friday night movie night treat.

{Gluten Free} Cookie Monster

Start by adding scoops of cookie dough to small ramekins.

To make this recipe even more simple, I used New Grains ready made Gluten Free Chocolate Chip Cookie Dough.

I like to fill the ramekin a little less than 1/2 full. Making sure to flatten out the dough with your fingers.

Cook, until golden, but still soft. Cool slightly. Top with vanilla ice cream, hot fudge {homemade recipe here}, and caramel sauce {homemade recipe here}. And dig in!

Cookie Monster {Gluten Free}

New Grains Gluten Free Chocolate Chip Cookie Dough
Vanilla ice cream
Caramel Sauce {find my favorite recipe here}
Hot Fudge Sauce {find my favorite recipe here}

Preheat Oven to 300 F. Spray small ramekins with cooking spray. Press 1/4 – 1/2 cup cookie dough into the bottom of each ramekin. Bake for about 15-18 minutes, or until golden brown. Remove from oven and let cool slightly; until the dish is cool enough to touch. Top with vanilla ice cream, hot fudge and caramel sauce. Enjoy!
