Caprese Crepes {Gluten Free}

If you need another reason to plant tomatoes and basil in your summer garden; then these Savory Caprese Crepes might just send you over the that ledge. Not only are they fast, healthy and delicious, they are gluten free as well!

Caprese Salad is on our menu, ALL. SUMMER. LONG! The combination is delicious, quick and fresh. I love recipes that take you straight to the garden. Picking from the summer garden is pure magic!

I thought it would be fun to take a spin on that classic Caprese Salad with these Caprese Crepes!

Crepes are good for any meal, any time of day! Wouldn’t these make a perfect item for your Easter Brunch?

Simply cook your crepe batter, top with pesto (homemade Pesto recipe here), mozzarella chunks and cherry tomatoes.

We didn’t realize until after we were finished eating, that we should have drizzled these babies with Balsamic reduction! Wouldn’t that be HEAVENLY!?

Caprese Crepes {Gluten Free}

Caprese Crepes

New Grains Gluten Free Crepe Mix (found here or here)
Pesto (homemade recipe here)
Cherry tomatoes, halved
Mozzarella cheese, cut in to chunks

*Balsamic Reduction (optional)

Make Crepe batter according to package directions.
Heat pan, laddle 1/4 cup crepe batter into pan, swirl to spread out. Once batter looks dry, flip. Cover half the crepe with 1-2 Tbsp pesto, top with cheese chunks and tomatoes. Allow cheese to melt. Once crepe is cooked, fold the crepe in half and serve. *Drizzle with Balsamic reduction.

  2. Just found you on Instagram and glad I did. Pretty sure we would be garden buddies if we lived by each other😉💐. Crossing my fingers we get to make it to This is the Place Heritage Park on out trip to Utah next month.
