Caramel popcorn and summer just seem to go together around our house. Wether its late nights, game night, swim parties, outdoor movies, the lake, fireworks, or camping; you can almost always find a big bowl of fresh homemade Ooey Gooey Caramel Popcorn at hand.
My sweet friend and neighbor shared this caramel recipe with me years ago. Not only is it tasty on popcorn, it also makes the perfect Caramel Apple dip come fall, and it’s Gluten Free!
A big THANKS to my dear friend Wendi for allowing me to share her super scrumptious recipe with you all.
Don’t forget to sprinkle your big bowl of Ooey Gooey Caramel Popcorn with some Fluer de Sel whilst it’s still hot for some added deliciousness!
Ooey gooey Caramel Popcorn
2 cubes butter
1 can sweet and condensed milk
2 cups brown sugar
1 cup corn syrup
1 tsp vanilla
Popcorn (here or my favorite local popcorn from here)
Fluer de sel (be sure and clip the $3 off coupon)
Melt butter, sweet and condensed milk, & Karo syrup. Add sugar. Cook on medium to low heat. Once it bubbles, cook for 8 minutes, stirring constantly. Remove from heat and add vanilla.
Airpop a big bowl of popcorn and toss with warm caramel sauce until desired consistency is reached. Whilst still warm, sprinkle with Fluer de sel or sea salt.
Left over caramel can be refrigerated and makes an excellent caramel apple dip in the fall.
